People have asked us why in the heck we would want to show others how to make their own hot sauce at home when we are trying to sell them hot sauces that are already bottled? The reason is simple....the more a person is involved in this whole hot sauce craze, the better the industry will be as a whole! And besides how are you going to know if you have a "winner of a sauce" if you don't buy our sauces and compare them! Who knows....maybe if you’re new hot sauce creation is really good and you end up producing your own signature sauces in volume, we may be interested in selling your sauces too! But that’s a subject for another time....and you are here to start making your own hot sauce at home....so how do you get started?
The first and most important step in making your own hot sauce at home is the selection of the peppers. You need to decide the flavor and "hot-ness" of the sauce that you are about to make. Maybe you want to combine different peppers and/or ingredients for a unique sauce all your own? Check out our Pepper Guide to help you choose the peppers with the right flavor and "hot-ness" that you are looking for.
Once you have decided on the type of peppers that will be going into your hot sauce, the next step is to actually acquire and prepare the peppers. Whether you are getting your peppers from your local supermarket or your own garden, you will want to make sure the peppers that you have selected are fresh and fully ripened. Do NOT combine ripe peppers with ones that are not! You will also want to cut off any imperfections and the stems of the peppers. Some people also core the pepper and remove the seeds....we do not feel that this is a necessary step and actually prefer to have some of the seeds in our sauce. This isn't wacky tabaccy! The pepper seeds are not going to make you sterile! :P But hey, if you prefer to remove them, by all means....go for it! Just know that a lot of the Capsaicin may be lost if you do this.
